What is ISO 12872-Determination of the 2-glyceryl monopalmitate in olive-pomace oils about?
ISO 12872 is an international standard on olive oils and olive-pomace oils that discusses the determination of the 2-glyceryl monopalmitate content in olive-pomace oils to ensure olive oil is safe for consumption.
ISO 12872 specifies a procedure for the determination of the content, as a percentage mass fraction, of 2-glyceryl monopalmitate in olive oils and olive-pomace oils that are liquid at ambient temperature (20 °C).
The mass fraction of 2-glyceryl monopalmitate in the monoacylglycerol fraction is determined according to the method specified in ISO 12872.
Note: ISO 12872 is based on COI/T.20/Doc. 23:2006.
Who is ISO 12872-Determination of the 2-glyceryl monopalmitate in olive-pomace oils for?
ISO 12872 on the determination of the 2-glyceryl monopalmitate in olive-pomace oils is useful for:
- Food scientists
- Food technologists
- Food laboratories
- Food health and safety departments
Why should you use ISO 12872-Determination of the 2-glyceryl monopalmitate in olive-pomace oils?
Olive oil is composed of glycerides. Glycerides are formed by esterification of glycerol and long chain fatty acids with three hydroxyl groups. By determining the percentage of 2-glyceryl monopalmitate in liquid vegetable oils, possible esterified oil mixtures are determined.
ISO 12872 provides you with apparatus, sampling, preparation of test sample, procedures, preparation of the silylated derivatives and gas chromatography, precision and much more.
The procedures provided by ISO 12872 assist you in the determination of 2-glyceryl monopalmitate content in olive oils and olive-pomace oils to improve the quality of olive oils and olive-pomace oils.
With obedience and compliance to ISO 12872, you can enhance olive oils and olive-pomace oils efficacy and manufacture a standardized product.
