What is ISO 5530-1-Determination of rheological properties of wheat dough about?
ISO 5530 is an international standard on wheat flour that discusses the determination of water absorption and rheological properties using a farinograph to enhance the physical characteristics of wheat dough.
ISO 5530-1 is the first part of the ISO 5530 series that specifies a method, using a farinograph, for the determination of the water absorption of flours and the mixing behaviour of doughs made from them by a constant flour mass procedure, or by a constant dough mass procedure. The method under ISO 5530-1 is applicable to experimental and commercial flour from wheat (Triticum aestivum L.).
Note: ISO 5530-1 is based on ICC 115/1 and AACC Method 54-21.2.
Who is ISO 5530-1-Determination of rheological properties of wheat dough for?
ISO 5530-1 on the determination of rheological properties of wheat dough is useful for:
- Food scientists
- Food technologists
- Food laboratories
- Food health and safety departments
Why should you use ISO 5530-1-Determination of rheological properties of wheat dough?
Wheat flour is used for bakery products like bread, biscuits, and cake. It is also used in some of the traditional products and sweets preparation. The size and shape of the curves obtained are a guide to the physical properties of the dough. These physical properties influence the end-use quality of the flour.
ISO 5530-1 provides you with apparatus, sampling, procedures for the determination of the moisture content of the flour, evaluation of the farinogram and calculation of the derived rheological characteristics and characteristics relating to the consistency of dough procedures.
The methods and procedures provided by ISO 5530-1 assist in determining the water absorption and rheological properties of wheat dough, enhancing the quality of dough, and ensuring it is free from contaminations.
With obedience and compliance to ISO 5530-1, you can enhance the efficacy of the wheat dough and manufacture a standardized high-quality product.
